  • 2 cups cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • 1 cup chopped broccoli (fresh or frozen)
  • 1 cup milk (whole or low-fat)
  • 1/2 cup diced onion
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • to taste Salt
  • 1 tablespoon olive oil (or any cooking oil)

Preparation

  • Preheat your oven to 350°F (175°C).
  • If you haven’t already, cook your rice according to the package instructions. Set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until soft, about 3-4 minutes. You can also toss in your broccoli here, cooking until slightly tender.
  • In a large mixing bowl, combine the cooked rice, sautéed onion, broccoli, milk, garlic powder, black pepper, salt, and half of the cheddar cheese. Mix until well combined.
  • Pour the mixture into a well-greased baking dish (approximately 9x9 inches).
  • Sprinkle the remaining cheddar cheese and the grated Parmesan cheese evenly on top.
  • Place in the preheated oven and bake for about 20-25 minutes, or until the cheese is bubbly and golden brown.
  • Allow it to cool for a few minutes before serving. Enjoy your delicious Cozy Cheesy Rice Bake!

Notes

Feel free to swap out the broccoli for your favorite veggies. For extra protein, consider adding cooked shredded chicken or legumes. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 15-20 minutes.
