Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

Add-ins

  • 1 cup fresh blueberries

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×5-inch loaf pan or line it with parchment paper.
  • In a large bowl, sift together the flour, baking powder, and salt. Set aside.
  • In another bowl, beat the softened butter and cream cheese together until smooth and creamy.
  • Gradually add sugar, blending thoroughly. Add the eggs one at a time, mixing well after each, then add the vanilla extract.
  • Slowly add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  • Gently fold in the fresh blueberries.

Baking

  • Pour the mixture into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • Slice and enjoy!

Notes

For a lighter option, substitute Greek yogurt for cream cheese. Keep an eye on baking in the last 10 minutes to prevent over-baking.
