Ingredients

Main Ingredients

  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 can (15 oz) kidney beans, rinsed and drained Can substitute with other beans.
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes Use diced tomatoes with their juices.
  • 1 cup beef broth For a richer flavor, use homemade beef broth.

Vegetables and Aromatics

  • 1 onion, diced Yellow or white onions work well.
  • 2 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 green bell pepper, diced Can use any color of bell pepper.

Spices

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper Adjust according to preference.

Optional Toppings

  • sour cream For creaminess.
  • shredded cheese Cheddar or Monterey Jack are great options.
  • chopped green onions For a fresh crunch.

Instructions

Cooking the Beef

  • In a large pot over medium heat, add the ground beef. Cook until browned, breaking it apart as it cooks, about 5 minutes. Drain excess fat if needed.

Adding Vegetables and Spices

  • Add the diced onion, minced garlic, and diced green bell pepper to the pot. Stir and cook for another 3-4 minutes until the vegetables begin to soften.

Final Ingredients

  • Stir in the kidney beans, black beans, diced tomatoes (with their juices), and beef broth. Sprinkle in the chili powder, cumin, salt, and pepper.

Simmering

  • Bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for about 20 minutes, stirring occasionally.

Final Touches

  • Taste and adjust seasoning if necessary. Once done, remove from heat and let sit for a few minutes before serving.

Serving

  • Ladle into bowls and top with your favorite toppings like sour cream, shredded cheese, and green onions for a delicious finish!

Notes

Substitutions: If you don’t have kidney beans, you can substitute with pinto beans or chickpeas. For deeper flavors, allow to simmer longer but add broth if it looks too dry. Avoid overcooking the beef; it continues to cook as it simmers.
