Cozy Autumn Wild Rice Soup is a comforting, hearty dish that’s perfect for crisp fall evenings. Loaded with tender vegetables, earthy wild rice, and a creamy broth, this soup is both nourishing and satisfying. It’s ideal as a main course or a starter for any autumn-inspired meal.

Ingredients
  

  • 2 tbsp olive oil or butter
  • 1 onion diced
  • 2 garlic cloves minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 sweet potato peeled and cubed
  • 1 cup wild rice
  • 4 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • 2 tbsp butter for roux
  • 2 tbsp all-purpose flour
  • 1 cup milk or heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Instructions
 

  • Heat oil or butter in a pot and sauté onion, garlic, carrots, celery, and sweet potato until softened.
  • Add wild rice, broth, thyme, bay leaves, salt, and pepper. Simmer for 45-50 minutes.
  • In a separate saucepan, make a roux with butter, flour, and milk or cream.
  • Stir the creamy sauce into the soup and simmer for 5-10 minutes. Remove bay leaves.
  • Serve hot, garnished with parsley or your favorite toppings. Enjoy!
