- 1 cup uncooked wild rice
- 2 tablespoons olive oil or butter
- 1 onion diced
- 2 carrots sliced
- 2 celery stalks sliced

- 6 cups vegetable or chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 cup diced butternut squash optional
- 1 cup heavy cream coconut milk, or cashew cream
- Salt and pepper to taste
- Optional garnish: fresh parsley or a sprinkle of Parmesan
Prepare the Vegetables:
