  • 1 pound chicken breast, cut into bite-sized pieces
  • ½ cup unsalted butter Softened for best consistency
  • 2 tablespoons minced garlic
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • optional red pepper flakes For a hint of spice

Preparation

  • Begin by cutting the chicken breasts into bite-sized pieces. Season them with salt, pepper, and onion powder to taste.

Cooking

  • In a large skillet over medium heat, melt 2 tablespoons of butter. Add the seasoned chicken pieces and cook until golden brown and cooked through, about 5-7 minutes, stirring occasionally.
  • In a separate bowl, combine the remaining butter, minced garlic, parsley, dill, and red pepper flakes (if using). Stir well.
  • Once the chicken is cooked, pour the cowboy butter mixture over the chicken bites in the skillet. Toss gently until well coated.

Serving

  • Remove from heat and serve warm. Enjoy the flavors on their own or with toothpicks for easy snacking.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat or microwave in 30-second intervals.
