  • 4 large large eggs
  • 1 cup cottage cheese
  • 1 cup fresh spinach (chopped) Ensure the spinach is washed and thoroughly drained before chopping.
  • 1/2 cup bell pepper (diced)
  • 1/2 cup onion (diced)
  • 1 cup shredded cheese (like mozzarella or cheddar)
  • Salt and pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Cooking oil (for greasing)

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9-inch pie dish or round baking dish with a little cooking oil.
  • In a large mixing bowl, whisk together eggs, garlic powder, onion powder, salt, and pepper until well combined.
  • Gently fold in the cottage cheese to the egg mixture, ensuring it’s evenly distributed.
  • Add the chopped spinach, diced bell pepper, and onion. Stir until everything is well mixed.
  • Fold in the shredded cheese until well combined.
  • Pour the mixture into the greased baking dish, smoothing the top.
  • Bake for 30-35 minutes, or until the top is golden brown and set in the center.
  • Allow to cool for a few minutes before slicing into wedges.

Notes

You can substitute different vegetables like mushrooms or zucchini. For leftovers, store in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. To reheat, microwave for 1-2 minutes or bake in an oven at 350°F for 10-15 minutes.
