  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons fresh herbs (such as basil, parsley, or chives), finely chopped Herb varieties can be adjusted to taste.
  • 1 tablespoon olive oil or melted butter (optional) Optional ingredient for added richness.
  • 1 large egg (optional) Optional for additional richness.

Preparation

  • Preheat your oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  • In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Stir well to ensure everything is evenly mixed.
  • In a separate bowl, mix the cottage cheese, olive oil (if using), and egg (if using) until smooth and well combined.
  • Add the wet mixture to the dry ingredients and incorporate gently with a spatula until just combined. Be careful not to overmix!
  • Fold the chopped herbs into the mixture, ensuring they are evenly distributed throughout the dough.
  • Using a tablespoon or an ice cream scoop, portion the dough and place each scoop onto the prepared baking sheet, leaving some space between each roll.

Baking

  • Bake in the preheated oven for about 15-20 minutes or until the rolls are golden brown and cooked through.
  • Once baked, let them cool slightly on a wire rack. Serve warm and enjoy!

Notes

Experiment with different herbs for unique flavors. Store in an airtight container in the fridge for up to 3 days.
