  • 1 cup warm water Around 110°F/43°C to activate yeast
  • 2 tablespoons olive oil Adds moisture to the dough

Activation and Mixing

  • In a small bowl, combine the warm water with active dry yeast. Allow it to sit for about 5-10 minutes until it becomes frothy.
  • In a large mixing bowl, combine cottage cheese, flour, and salt. Stir well. Add in the yeast mixture and olive oil, and mix until a dough forms.

Kneading and Rising

  • Transfer the dough to a floured surface. Knead it for about 5-7 minutes until it becomes smooth and elastic.
  • Place the kneaded dough in a lightly greased bowl, cover it with a cloth, and let it rise for about 30 minutes in a warm area until it doubles in size.

Shaping and Cooking

  • Once risen, punch down the dough and divide it into equal portions (around 6-8). Roll each piece into a circle or oval shape, about ¼ inch thick.
  • Heat a skillet over medium heat. Cook each flatbread for 2-3 minutes on each side until golden brown and puffed up.
  • Serve warm with your favorite toppings or dips!

Notes

For variations, you can substitute cottage cheese with Greek yogurt or use whole wheat flour. If you're pressed for time, you can skip the rising period, but it won't be as fluffy. Ensure water is warm, not hot, to avoid killing the yeast.
