Preparation

  • In a large mixing bowl, combine the cottage cheese, all-purpose flour, egg, baking powder, and salt. If you like, add olive oil and any fresh herbs or spices for extra flavor. The mixture should come together into a soft, slightly sticky dough.
  • On a lightly floured surface, knead the dough for about 1-2 minutes until smooth. Be sure not to over-knead—just enough to bring it together!
  • Divide the dough into equal portions (about 4-6 pieces), then roll each piece into a circle about 1/4 inch thick. It doesn't need to be perfect; a little rustic charm adds character!

Cooking

  • Heat a non-stick skillet over medium heat. Place each flatbread into the skillet and cook for about 2-3 minutes per side until golden brown and slightly puffed.
  • Once cooked, remove the flatbreads from the skillet. Serve them warm with your favorite toppings, dips, or simply enjoy them as they are.

Notes

For ingredient substitutions, feel free to use whole wheat or gluten-free flour. Ensure the skillet isn't too hot to avoid burning the flatbreads.
