Ingredients
  

For the bread

  • 1 cup cottage cheese (preferably full-fat for creaminess)
  • 3 large eggs Use room temperature for better mixing.
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil or melted butter
  • optional: herbs or spices (like garlic powder or onion powder) Add for extra flavor.

Preparation

  • Preheat your oven to 300°F (150°C).
  • In a mixing bowl, combine the cottage cheese and eggs. Whisk until fully blended.
  • Add the baking powder and salt. If using optional herbs or spices, sprinkle in now and mix thoroughly.
  • Grease a baking sheet or line it with parchment paper.
  • Spoon the mixture into small mounds on the baking sheet, keeping them even in size.
  • Bake in the preheated oven for about 25 minutes, until golden and a toothpick comes out clean.
  • Allow to cool on a wire rack before serving.

Notes

Cottage Cheese Cloud Bread is best enjoyed fresh but can be stored in an airtight container in the fridge for up to three days or frozen for up to three months. Reheat in the toaster or oven.
