  • 1 cup cottage cheese You can use low-fat cottage cheese for a lighter version.
  • 2 pieces ripe bananas, mashed Make sure your bananas are nice and ripe for the best sweetness.
  • 2 pieces eggs
  • 1/3 cup honey or sugar You can use either honey or sugar based on preference.
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder Ensure it's fresh for best results.
  • 1/2 teaspoon baking soda Make sure your baking soda is fresh.
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Preparation

  • Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper for easy removal.
  • In a large mixing bowl, combine the cottage cheese, mashed bananas, eggs, honey (or sugar), and vanilla extract. Mix until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture. Stir gently until just combined. Be careful not to overmix.
  • Pour the batter into your prepared loaf pan. Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes
