  • 2 cups fresh okra, sliced into 1/2-inch rounds
  • 1 medium onion, chopped
  • 1 piece bell pepper (red, yellow, or green), diced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon creole seasoning (ensure it’s Halal-compliant)
  • 1/2 teaspoon black pepper

Preparation

  • Start by washing and slicing the okra, dicing the bell pepper, and chopping the onion. Mince the garlic. Having everything ready will make cooking easier!

Sauté

  • Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, cooking for about 5 minutes until they begin to soften.

Combine Ingredients

  • Stir in the minced garlic and sliced okra. Sauté for another 3-4 minutes.
  • Add the corn, vegetable broth, creole seasoning, and black pepper. Stir everything together and simmer for about 10-15 minutes.

Serve

  • Taste your dish and add salt if needed. Garnish with fresh parsley before serving.

Notes

Use fresh corn and okra for the best texture and flavor. Feel free to substitute bell pepper with zucchini or tomatoes. Avoid overcooking okra to prevent a slimy texture.
