  • 4 cups Fresh Corn Kernels (or use frozen corn for convenience) Fresh corn recommended for best flavor.
  • 4 tablespoons Butter (melted) Use olive oil for a vegan option.
  • 2 tablespoons Lime Juice Freshly squeezed for the best flavor.
  • to taste Salt
  • 1 teaspoon Chili Powder Adjust according to spice preference.
  • ½ cup Cotija Cheese (crumbled) Can substitute with Halal-approved cheese.
  • 2 tablespoons Cilantro (fresh, chopped) Optional for garnish.

Instructions
 

Preparation

  • If using fresh corn, shuck the corn and cut the kernels from the cob. If using frozen corn, measure it out and allow it to thaw slightly.

Cooking

  • In a large skillet over medium heat, melt 2 tablespoons of butter. Add the corn kernels and cook for about 5-7 minutes until they're heated through and slightly caramelized.
  • In a bowl, combine the cooked corn with melted butter, lime juice, salt, and chili powder. Stir well.

Assembly

  • Spoon the corn mixture into cups, topping with crumbled Cotija cheese and garnishing with fresh cilantro.
  • Serve warm and invite family members to customize their portions with extra toppings!

Notes

For the best texture, cook corn just until tender but still crisp. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat by microwaving in short intervals while stirring.
