  • 2 to 3 pounds beef chuck roast
  • 4 medium carrots, chopped
  • 4 medium potatoes, quartered
  • 1 medium onion, sliced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Optional: Fresh parsley for garnish

Preparation

  • Begin by chopping your vegetables and seasoning your beef chuck roast with salt and pepper.
  • For added flavor, you can sear the meat in a hot skillet until browned on all sides, about 3-4 minutes per side.
  • Place the seared roast in the slow cooker. Scatter the chopped carrots, potatoes, and sliced onion around the meat.
  • In a bowl, mix the beef broth, tomato paste, minced garlic, thyme, and rosemary. Pour this mixture over the roast and vegetables.

Cooking

  • Cover your slow cooker and set it to low for 8 hours or high for 4-5 hours. The longer it cooks, the more tender your meat will be!
  • Once done, be cautious as you remove the roast from the slow cooker—it should be supremely tender! Slice it and serve with your roasted vegetables and flavorful broth.

Notes

Choose the chuck roast for best results. Searing the meat adds depth of flavor. Feel free to adjust seasonings to suit your taste. Store leftovers in an airtight container for up to 3-4 days, or freeze for 2-3 months.
