  • 1 pound Italian sausage (Halal ground or links, casings removed)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 1 medium bell pepper, diced (any color)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups vegetable broth or chicken broth (Halal-friendly)
  • 1 package (9 oz) refrigerated tortellini (cheese or your favorite variety)
  • 1 tablespoon Italian seasoning

Preparation

  • Start by chopping the onion, garlic, carrots, and bell pepper. If using sausage links, remove the casings.

Cooking

  • In a skillet over medium heat, brown the sausage until fully cooked, breaking it apart with a wooden spoon.
  • Once browned, drain any excess fat.
  • Add the browned sausage to the slow cooker, then layer in the chopped onion, garlic, carrots, and bell pepper.
  • Pour in the can of diced tomatoes and the broth.
  • Sprinkle in the Italian seasoning, salt, and pepper, then stir everything well to combine.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • In the last 30 minutes of cooking, stir in the tortellini and cover.
  • Continue cooking until the tortellini is tender and heated through.

Serving

  • Ladle the soup into bowls and sprinkle with fresh basil or parsley if desired.

Notes

Consider using turkey sausage for a leaner option. Feel free to add your favorite vegetables like zucchini or spinach toward the end of cooking for extra nutrients. To avoid mushy tortellini, add them in the last half hour of cooking. Add red pepper flakes for a kick.
