For the Snowballs
- 1/2 cup unsalted butter softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup shredded sweetened coconut
For Rolling
- 1 cup shredded sweetened coconut
- 1/2 cup powdered sugar
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
In a large mixing bowl, beat the softened butter and powdered sugar together until light and fluffy. Add the vanilla extract and mix until well combined.
In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the shredded sweetened coconut.
Using a cookie scoop or tablespoon, scoop out dough and roll it into balls. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.
In a shallow bowl, mix together the additional shredded sweetened coconut and powdered sugar.
Once the cookies are completely cool, roll each one in the coconut and powdered sugar mixture until fully coated.
Arrange the Coconut Snowballs on a serving platter and enjoy!
