  • 2 cups cooked chicken, shredded or diced
  • 2 cans (15 oz) white beans (cannellini or great northern), drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • 4 cups chicken broth
  • 1 cup heavy cream
  • to taste Salt and pepper

Optional Toppings

  • 1 to taste avocado
  • 1 to taste cilantro
  • 1 to taste sour cream
  • 1 to taste shredded cheese

Preparation

  • In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  • Sprinkle in the cumin, chili powder, and oregano, stirring for a minute to release their aromas.
  • Pour in the chicken broth, then add the shredded chicken, drained white beans, and diced green chiles. Season with salt and pepper as desired.
  • Increase the heat and bring the mixture to a simmer. Reduce the heat to low and cook for about 10-15 minutes to meld the flavors.
  • Just before serving, stir in the heavy cream to achieve that rich, creamy texture. Taste and adjust seasoning if needed.
  • Ladle the chili into bowls and garnish with your choice of toppings. Enjoy!

Notes

Customize the spice level by adding jalapeños or cayenne pepper. For quicker prep, use rotisserie chicken. Store in an airtight container and reheat gently.
