Ingredients
  

For the Bars

  • 1 cup unsalted butter (softened) Ensure butter is at room temperature.
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract (Halal)
  • 2 cups all-purpose flour Can substitute with gluten-free blend.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dried cranberries (roughly chopped)
  • 1 cup white chocolate chips

For the Cream Cheese Frosting

  • 8 ounces cream cheese (softened) Ensure cheese is at room temperature.
  • 1/4 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (Halal)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.
  • In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy and light. This should take about 2-3 minutes with an electric mixer.
  • Beat in the eggs one at a time along with the vanilla extract, mixing until everything is well incorporated.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  • Carefully fold in the chopped dried cranberries and white chocolate chips into the batter.

Baking

  • Pour the batter into the prepared baking pan and smooth the surface.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Frosting and Serving

  • While the bars bake, prepare the cream cheese frosting by beating together the softened cream cheese and butter until smooth, then gradually add the powdered sugar and vanilla extract until creamy.
  • Allow the bars to cool in the pan for at least 15 minutes before transferring to a wire rack to cool completely. Spread the cream cheese frosting generously over the bars.
  • Cut into squares and serve the delightful treats at your family gathering.

Notes

Store the bars in an airtight container for up to a week. For long-term storage, freeze them for up to three months. Thaw at room temperature or microwave for a few seconds before serving.
