  • 1 lb ground beef Substitutable with ground turkey or chicken.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced Can add additional vegetables such as carrots or zucchini.
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 2 cups beef broth Add more if the dish seems dry.
  • 2 cups elbow macaroni Adjust cooking times for gluten-free pasta.
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • Grated cheese (optional, for topping) Use to enhance flavor.

Preparation

  • In a large pot over medium heat, add the ground beef. Cook, breaking it apart until browned, about 5–7 minutes. Drain any excess fat.
  • Add the chopped onion, minced garlic, and diced red bell pepper to the pot. Sauté until the vegetables are softened, about 3–4 minutes.
  • Stir in the diced tomatoes (with juice), tomato sauce, and beef broth. Mix well to combine.
  • Add the elbow macaroni and Italian seasoning. Bring everything to a boil.
  • Reduce the heat to medium-low and cover the pot. Cook for about 15 minutes, or until the pasta is tender, stirring occasionally.
  • Taste and season with salt and pepper as needed. Sprinkle with grated cheese before serving if desired. Enjoy your comforting meal!

Notes

To store leftovers, keep in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Reheat on the stovetop with a splash of beef broth if dry.
