Ingredients
  

For the pancakes

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted

For the cinnamon swirl

  • 1 tablespoon ground cinnamon
  • ¼ cup brown sugar

For serving

  • ½ cup cream cheese icing or maple syrup Optional topping

Preparation

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk the milk, egg, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients, mixing gently until just combined. It’s okay if there are a few lumps—don’t overmix!
  • In a small bowl, blend together the brown sugar and ground cinnamon for the filling. Set aside.

Cooking

  • Preheat a non-stick skillet or griddle over medium heat.
  • Pour about ¼ cup of pancake batter onto the skillet. Quickly sprinkle some of the cinnamon mixture on top of the batter.
  • Using a toothpick or a fork, gently swirl the cinnamon mixture into the pancake batter.
  • Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes.

Serving

  • Once golden brown, stack the pancakes on a plate. Drizzle with cream cheese icing or maple syrup before serving.

Notes

Serve with fresh fruit like strawberries or blueberries for a refreshing contrast, and consider including crispy hash browns or eggs for a balanced meal. Don’t forget to pair with coffee or tea!
