  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Filling

  • 1 cup brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 1/4 cup unsalted butter, softened

Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons milk

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add the eggs and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Gradually add this dry mixture to the wet ingredients, stirring until a soft dough forms.
  • In a small bowl, combine the brown sugar, ground cinnamon, and softened butter to make a paste-like filling. Set aside.
  • On a floured surface, roll out the dough into a rectangle approximately 1/4 inch thick. Spread the cinnamon filling evenly over the dough.
  • Starting from one edge, carefully roll the dough into a log. Slice the log into 1-inch pieces and place them on the prepared baking sheet.
  • Bake in the preheated oven for 12-15 minutes or until the cookies are lightly golden brown around the edges.
  • While the cookies cool, whisk together the powdered sugar and milk in a small bowl until smooth. Adjust the thickness by adding more sugar or milk as needed.
  • Once the cookies are cool, drizzle the glaze generously over each one.

Notes

For added richness, substitute half the butter for cream cheese in the dough. Be careful not to overbake; watch for edges to just turn golden. Add chopped nuts or raisins to the filling for a flavor twist.
