Ingredients
  

Wet Ingredients

  • 3 pieces ripe bananas (mashed) Ensure bananas are very ripe for maximum sweetness.
  • 1/2 cup unsalted butter (softened) Can substitute with unsweetened applesauce for a healthier option.
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon

Filling

  • 1/4 cup brown sugar (packed) For the filling.
  • 1 tablespoon ground cinnamon For the filling.

Optional Glaze

  • 1/2 cup powdered sugar For the glaze, optional.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add mashed bananas, eggs, and vanilla extract; mix until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

Filling and Baking

  • In a small bowl, mix together brown sugar and additional cinnamon.
  • Pour half of the batter into the prepared loaf pan, then sprinkle half of the cinnamon-sugar mixture over it. Pour the remaining batter on top, followed by the rest of the filling.
  • Using a knife, swirl the mixtures together gently.
  • Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Glazing

  • If desired, mix powdered sugar with a splash of water or milk to make a glaze, drizzling it over the cooled bread.

Notes

For storage, keep in an airtight container in the refrigerator for up to 5-7 days, or freeze for up to 3 months. Reheat slices in the microwave for about 15-20 seconds, or in a preheated oven at 350°F (175°C) for about 5-10 minutes.
