Ingredients
  

For the Peach Filling

  • 3 cups fresh peaches, peeled and chopped (about 4-5 medium peaches)
  • 1 cup granulated sugar, divided
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch

For the Crumble Topping

  • 1.5 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, melted (or substitute with coconut oil for dairy-free)

Preparation

  • Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper.
  • In a large bowl, combine chopped peaches, ¼ cup of sugar, lemon juice, and cornstarch. Mix until peaches are coated and set aside.
  • In another bowl, mix remaining sugar, flour, oats, cinnamon, and salt. Pour in melted butter and mix until crumbly.

Assembling and Baking

  • Press half of the crumble mixture into the bottom of the prepared baking dish.
  • Spread the peach filling evenly over the crust, then sprinkle the remaining crumble on top.
  • Bake for about 35-40 minutes or until the crumble is golden brown and the filling is bubbly.
  • Let bars cool for at least 15 minutes before slicing.

Notes

For best results, ensure butter is slightly cooled before mixing. Store in an airtight container for up to one week or freeze for up to three months. Reheat in microwave or oven.
