  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Cinnamon Swirl

  • 1/3 cup brown sugar
  • 1 tablespoon cinnamon

Icing

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  • In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, salt, and cinnamon until thoroughly combined.
  • In another bowl, mix together buttermilk, vegetable oil, eggs, and vanilla extract.
  • Pour the wet mixture into the dry ingredients and mix until just combined—don't overmix!
  • In a small bowl, combine brown sugar and cinnamon for the swirl.
  • Pour half of the batter into the prepared pan, sprinkle half of the cinnamon swirl mixture, then pour the remaining batter and top with the rest of the cinnamon mixture.
  • Use a knife to gently swirl the cinnamon mixture into the batter.

Baking

  • Place the pan in the preheated oven and bake for about 25-30 minutes, until a toothpick inserted into the center comes out clean.

Icing

  • Allow the cake to cool before mixing the icing by whisking powdered sugar, milk, and vanilla extract until smooth, then drizzle over the cooled cake.

For the best flavor, ensure your eggs and buttermilk are at room temperature and use fresh ground cinnamon.
