  • 1/4 cup Lime Juice (freshly squeezed) Fresh lime juice enhances the zesty flavor.
  • 1/4 cup Olive Oil Use good quality olive oil for dressing.
  • 1 cup Bell Peppers (mixed colors, diced) Add color and crunch.
  • 1 cup Cucumber (diced) Provides a refreshing crunch.
  • 1/2 cup Red Onion (finely chopped) Red onion adds a subtle sweetness.

Preparation

  • Start by boiling salted water in a large pot. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking.
  • While the pasta is cooling, chop your bell peppers, cucumber, and red onion. Set aside.
  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Slowly add the chopped cilantro and mix until combined.
  • In a big mixing bowl, combine the cooled pasta, chopped veggies, and dressing. Toss well to ensure everything is coated in the zesty lime sauce.
  • Give it a taste and adjust seasoning if needed.
  • Chill in the fridge for about 15-20 minutes before serving for a refreshing taste. Enjoy!

Notes

This salad is best enjoyed fresh but can be stored in the fridge for up to three days. If using avocados, consume within a day or two to prevent browning. Consider adding black beans, corn, or diced avocado for extra nutrition and flavor.
