Ingredients
  

For the Crust

  • 1.5 cups crushed graham crackers
  • 0.5 cups unsalted butter, melted

For the Filling

  • 3 cups heavy whipping cream Ensure it's cold for whipping.
  • 1 cups powdered sugar
  • 1.5 cups semi-sweet chocolate chips For a more intense flavor, use dark chocolate.
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon peppermint extract
  • 0.25 cups chocolate shavings for topping Optional

Preparation

  • In a mixing bowl, combine crushed graham crackers and melted butter. Mix until the crumbs are well-coated.
  • Press this mixture firmly into the bottom of a pie dish to create an even crust. Set aside.

Make the Filling

  • In a separate large bowl, whip the heavy whipping cream until soft peaks form.
  • Gradually add the powdered sugar and continue whipping until stiff peaks form.

Melt the Chocolate

  • In a microwave-safe bowl, melt the chocolate chips in 30-second increments, stirring in between until smooth. Let it cool slightly before proceeding.

Combine Ingredients

  • Carefully fold the melted chocolate and both the vanilla and peppermint extracts into the whipped cream until fully combined.

Fill and Chill

  • Pour the chocolate mixture into the prepared graham cracker crust, spreading it evenly.
  • Cover the pie with plastic wrap and let it chill in the refrigerator for at least 4 hours, or until set.

Garnish and Serve

  • If desired, top with chocolate shavings before serving. Slice and enjoy!

Notes

For best texture, use cold heavy cream for whipping. Avoid over-mixing the chocolate with the whipped cream.
