- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1 cup mini marshmallows
Preheat your oven to 350°F (175°C) to ensure your cookies will bake evenly and achieve that wonderful golden edge.
In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt, then set this bowl aside.
In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, around 3-4 minutes.
Mix in the egg and vanilla extract until fully incorporated.
Gradually add the dry mixture to the wet mixture, mixing until just combined without overmixing.
Fold in the chocolate chips and mini marshmallows gently, making sure they're evenly distributed throughout your dough.
Using a cookie scoop, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, leaving space between each scoop for spreading, and bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still soft.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
