Ingredients
  

For the cookies

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, room temperature Ensure it's soft for easier mixing.
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup chocolate chips

For the cheesecake filling

  • 4 oz cream cheese, softened Make sure it's at room temperature.
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips.
  • In another bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.

Assembly

  • Scoop out a tablespoon of cookie dough and flatten it in your palm.
  • Place about a teaspoon of cheesecake filling in the center, then enclose the filling with the dough, rolling it into a ball.
  • Place it on the baking sheet.

Baking

  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3-4 days. Dough can be frozen for up to three months.
