  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water This creates a moist cake

Preparation

  • Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  • In a large mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  • Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Beat on medium speed until thoroughly combined.
  • Carefully stir in the boiling water. The batter will be thin, but that’s okay as it creates a moist cake.
  • Gently fold in the cherries, ensuring they’re evenly distributed throughout the batter.
  • Pour the batter evenly into the prepared cake pans.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Notes

For best results, use high-quality cocoa powder and fresh cherries. Allow cakes to cool completely before frosting to avoid melting frosting.
