Ingredients
  

For the Burrito

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons chipotle sauce
  • 1/2 cup ranch dressing
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, drained and rinsed
  • 1 cup corn, fresh or frozen
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup fresh lettuce, shredded
  • 1 piece tomato, diced
  • 4 large flour tortillas

Instructions
 

Marinate the Chicken

  • In a medium bowl, mix the chipotle sauce with the chicken breasts, covering them completely. Let them marinate for at least 10 minutes for maximum flavor.

Grill the Chicken

  • Preheat your grill or stovetop grill pan over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes on each side or until fully cooked through and no longer pink in the center. Allow resting for a couple of minutes before slicing it into strips.

Prepare the Tortillas

  • While the chicken cooks, warm the flour tortillas in a dry skillet for about 30 seconds on each side or until pliable.

Assemble Your Burritos

  • On each tortilla, start by layering a scoop of rice, followed by black beans, corn, grilled chicken strips, shredded cheese, lettuce, and diced tomatoes. Drizzle a generous amount of ranch dressing over the filling.

Wrap It Up

  • Fold in the sides of the tortilla and roll it tightly from the bottom up. Ensure everything is sealed within to avoid any spills!

Serve

  • Slice the burritos in half and serve them warm with extra chipotle sauce or ranch dressing on the side. Enjoy!

Notes

For deeper flavor, let the chicken marinate longer, preferably overnight. Feel free to add extra toppings or substitute ingredients based on your preference. Be careful not to overstuff the burritos to make wrapping easier. Store leftovers in an airtight container for 2-3 days.
