  • 1 pound Chicken breast, sliced into thin strips
  • 4 cups Cabbage, shredded
  • 1 cup Bell peppers, sliced (any color)
  • 1 cup Carrots, julienned or sliced
  • 2 tablespoons Soy sauce
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 2 tablespoons Olive oil (or any cooking oil)
  • 1/4 cup Green onions, chopped (for garnish)
  • Salt and pepper, to taste

Preparation

  • Begin by slicing the chicken breast into thin strips and chopping the vegetables.

Cooking

  • In a large skillet or wok, heat the olive oil over medium-high heat.
  • Add the sliced chicken to the skillet, season with salt and pepper, and cook for about 5-7 minutes, or until golden brown and cooked through.
  • Toss in the minced garlic and ginger, and stir for about 30 seconds to release their aromas.
  • Add the shredded cabbage, bell peppers, and carrots to the skillet, then stir-fry for another 5-7 minutes until the vegetables are tender-crisp.
  • Pour in the soy sauce and stir well to combine all the ingredients for an additional minute.
  • Remove from heat and garnish with chopped green onions. Serve hot and enjoy.

Notes

To enhance your stir-fry, cut chicken into even strips, customize with additional veggies like broccoli or zucchini, and use high heat for quick cooking. Best enjoyed fresh, but can be stored in an airtight container in the fridge for up to 3 days.
