Ingredients
  

For the Fritters

  • 1 can 15 oz can chickpeas, rinsed and drained
  • 1/2 cup finely chopped veggies (bell peppers, carrots, spinach, etc.) Use any leftover veggies you have
  • 1/4 cup finely chopped onion
  • 1/4 cup all-purpose flour (or chickpea flour)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons fresh herbs (such as parsley or cilantro)
  • Oil for frying

Preparation

  • In a large bowl, mash the rinsed chickpeas with a fork or potato masher, leaving some chunks for texture.
  • Stir in the finely chopped veggies, onion, garlic powder, cumin, salt, and pepper until evenly mixed.
  • Gradually mix in the flour until the mixture binds together. If it feels too wet, add a little more flour.
  • Using your hands, shape the mixture into small patties or fritters, about 2-3 inches wide.
  • In a skillet, heat a few tablespoons of oil over medium heat.
  • Once the oil is hot, place the fritters in the pan and cook until golden brown, about 3-4 minutes on each side.
  • Remove the fritters and place them on a paper towel-lined plate to absorb excess oil. Serve warm.

Notes

For a healthier version, bake the fritters at 400°F (200°C) for about 20-25 minutes, flipping halfway through until golden brown. Customize the veggies based on what you have on hand!
