  • 1 lb ground chicken
  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup fresh corn kernels (2-3 ears of corn)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese (optional for added flavor)
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (for a hint of smokiness)
  • as needed tablespoon olive oil for grilling

Instructions
 

Preparation

  • Start by washing and grating the zucchini. Cut the corn off the cob to get the required amount of fresh kernels.
  • In a large mixing bowl, combine the ground chicken, grated zucchini, corn, breadcrumbs, Parmesan cheese (if using), minced garlic, salt, pepper, and paprika. Mix well until everything is evenly incorporated.
  • Take a handful of the mixture and shape it into a patty, about 1/2 inch thick. Repeat the process until all the mixture is used up.

Cooking

  • Preheat your grill or stovetop pan over medium heat. Drizzle some olive oil to prevent sticking.
  • Place the patties on the grill and cook for about 5 minutes on each side or until they reach an internal temperature of 165°F (75°C) and are golden brown.

Serving

  • Remove the burgers from the grill and let them rest for a couple of minutes. Serve them on a bun or with your preferred side dishes and toppings.

Notes

Use fresh ingredients for the best flavor and texture. Chill the mixture if the patties seem too loose. Customize with your favorite herbs or spices.
