  • 2 pieces chicken breasts, boneless and skinless
  • 2 cups fresh spinach Using fresh will enhance flavor.
  • 1 cup mushrooms, sliced Any variety such as cremini or white.
  • 1 cup heavy cream For the creamy sauce.
  • 2 tablespoons olive oil For cooking the chicken.
  • 2 cloves garlic, minced Adds flavor to the dish.
  • Salt and pepper to taste
  • Optional: fresh herbs like parsley or thyme for garnish Adds freshness and flavor.

Preparation

  • Season the chicken breasts with salt and pepper on both sides.

Cooking

  • In a large skillet, heat olive oil over medium-high heat.
  • Place the seasoned chicken breasts in the skillet and cook for about 6-7 minutes per side until cooked through and golden brown. Remove from skillet and set aside.
  • In the same skillet, add minced garlic and sliced mushrooms. Sauté for about 3-4 minutes until the mushrooms are browned and tender.
  • Lower the heat to medium and add fresh spinach to the skillet, stirring until it wilts, which should take just a minute or two.
  • Pour the heavy cream into the skillet with the vegetables, stirring to combine, and allow to simmer for a few minutes until it slightly thickens.
  • Slice the cooked chicken breasts and add them back into the skillet, coating them generously with the creamy sauce.

Serving

  • If desired, sprinkle with freshly chopped herbs like parsley or thyme for that extra touch. Enjoy your delicious Chicken Spinach and Mushroom hot!

Notes
