  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil

Preparation

  • Start by cooking your chicken and shredding it if it isn't pre-cooked.
  • In a mixing bowl, combine the shredded chicken, diced ham, Swiss cheese, mozzarella cheese, Dijon mustard, salt, and pepper. Stir well until everything is evenly mixed.

Cooking

  • Heat a large skillet over medium heat. Add olive oil, allowing it to warm for about a minute.
  • Place one tortilla in the skillet. Spoon half of the chicken and cheese mixture over the tortilla. Top with the second tortilla to create a layered effect.
  • Cook for 3-4 minutes until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes until both sides are crispy and golden.
  • Remove from the skillet and let it cool for a minute before cutting into wedges.

Serving

  • Serve warm with your favorite dipping sauce, fresh salsa, or guacamole.
