  • 1 pound Chicken, sliced Use fresh chicken for best results
  • 8 ounces Chow Mein noodles Cook according to package instructions
  • 1 cup Bell peppers, sliced Colorful pepper varieties add flavor
  • 1 cup Carrots, thinly sliced Thin slicing for even cooking
  • 1 bunch Green onions, chopped For garnish

Sauce Ingredients

  • 3 tablespoons Soy sauce Adjust based on preference
  • 1 tablespoon Sesame oil For cooking
  • 2 cloves Garlic, minced For flavor
  • 1 teaspoon Ginger, minced For flavor
  • 1 cup Chicken broth or water Broth is more flavorful
  • 1 tablespoon Cornstarch (optional) For thickening the sauce

Instructions
 

Preparation

  • Cook chow mein noodles according to package instructions; set aside.
  • In a large skillet or wok, heat sesame oil over medium-high heat. Add garlic and ginger, sautéing until fragrant.

Cooking

  • Add sliced chicken to the pan and cook until browned and cooked through.
  • Add bell peppers and carrots. Stir-fry for a few minutes until vegetables are tender.
  • In a small bowl, mix soy sauce and chicken broth or water. Pour over the chicken and veggies.
  • If desired, mix cornstarch with a little water and stir in to thicken sauce.
  • Add cooked chow mein noodles and toss to combine.
  • Garnish with chopped green onions and serve.

Notes

Make sure to slice the chicken and vegetables evenly for even cooking. Use fresh ingredients for the best flavor. Feel free to add other veggies like broccoli or snap peas. Adjust the amount of soy sauce according to how salty you like it. If you have leftovers, store in an airtight container in the fridge for 3-4 days.
