Ingredients
  

Noodles and Sauce

  • 2 cups chow mein noodles Cook according to package instructions.
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1 cup chicken broth

Main Ingredients

  • 1 lb chicken breast, sliced Slice evenly for even cooking.
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli) Can use favorite vegetables.
  • 3 stalks green onions, chopped For garnish.
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp oil for stir-frying Use vegetable or sesame oil for more flavor.

Instructions
 

Preparation

  • Cook chow mein noodles according to package instructions. Drain and set aside.

Cooking

  • In a large skillet or wok, heat oil over medium-high heat. Add garlic and ginger, and sauté for 30 seconds.
  • Add sliced chicken and cook until browned and no longer pink, about 5-7 minutes.
  • Stir in mixed vegetables and cook until tender, about 3-4 minutes.
  • In a bowl, mix soy sauce, oyster sauce, cornstarch, and chicken broth. Pour this sauce over the chicken and vegetables, and stir to combine.
  • Add cooked chow mein noodles and toss everything together until well-coated in sauce.

Serving

  • Serve hot, garnished with chopped green onions.

Notes

For extra flavor, you can add some sesame oil or chili flakes. Don't overcook the noodles; they should be al dente before being added to the stir-fry.
