Preparation

  • If you're using leftover chicken, make sure it’s chopped into bite-sized pieces. If cooking fresh, grill or sauté it in a pan until fully cooked, then season with salt and pepper.
  • In a bowl, mash the ripe avocado until it reaches your desired level of creaminess. Add a pinch of salt and pepper for extra flavor.

Assembly and Cooking

  • On one slice of bread, spread a layer of the mashed avocado. Top with shredded chicken and sprinkle with shredded cheese. Optionally, add a dollop of mayonnaise.
  • Heat a skillet over medium heat and add olive oil or butter. Once hot, place the sandwich on the skillet and cook until the bread is golden brown and the cheese melts, about 3-4 minutes per side.
  • Remove the sandwich from the skillet, slice it in half, and serve immediately. Add any extra toppings like lettuce or tomato as desired.

Notes

To elevate your sandwich, consider adding jalapeños for heat, swapping turkey for chicken, or using lactose-free cheese. To avoid soggy bread, ensure the avocado is firm and avoid overloading the sandwich.
