  • 1 pound chicken breast, diced
  • 1 pound gnocchi (fresh or frozen)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese Use fresh for best flavor
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

  • Start by boiling a large pot of salted water. Once it reaches a rolling boil, add the gnocchi. They should be cooked according to package instructions, usually about 2-3 minutes. Once they float to the top, they’re ready! Drain and set aside.
  • In a large skillet over medium heat, melt 1 tablespoon of butter. Add the diced chicken, season with salt and pepper, and sauté until fully cooked, about 5-7 minutes.
  • In the same skillet, add the remaining tablespoon of butter and minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and stir well, allowing it to simmer for 2-3 minutes.
  • Gradually whisk in the grated Parmesan cheese until melted and creamy, making sure to stir frequently.
  • Add the cooked gnocchi and sautéed chicken into the sauce. Mix well until both the gnocchi and chicken are evenly coated.
  • Transfer to serving plates, sprinkle fresh parsley on top for a pop of color, and dig in!

Notes

For added flavor, consider sautéing some spinach or broccoli along with the chicken. Fresh ingredients make a huge difference in taste. Avoid overcooking the gnocchi and adjust the sauce's consistency with pasta water if needed. Leftovers can be stored for up to 3 days.
