  • 1 cup mochiko (sweet rice flour)
  • 1 cup water
  • 1/4 cup sugar

Preparation

  • Begin by washing and hulling the strawberries. Set them aside to dry while you make the mochi dough.
  • In a microwave-safe bowl, combine the mochiko, sugar, and water. Stir well until smooth, ensuring there are no lumps.

Cooking the Dough

  • Cover the bowl with a damp paper towel and microwave the mixture for 1 minute. Remove and stir.
  • Repeat this process for an additional 2-3 minutes, cooking in 1-minute intervals and stirring until the dough becomes translucent and slightly thick.

Forming the Mochi

  • Once cooked, sprinkle cornstarch on a clean surface to prevent sticking. Carefully transfer the mochi dough to the dusted surface and let it cool slightly.
  • Using your hands, take a small handful of dough and flatten it in your palm. Place a strawberry in the center, then fold the dough around it, pinching to seal.
  • Repeat with the remaining dough and strawberries.

Finishing Touch

  • Roll the finished mochi in cornstarch to prevent them from sticking together. Enjoy them fresh, or refrigerate them for a cool treat!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Avoid freezing as it alters the texture. Allow them to reach room temperature before serving.
