  • 1 cup creamy peanut butter (unsweetened)
  • 1 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine 1 cup of creamy peanut butter, 1 cup of granulated sugar, and 1 teaspoon of vanilla extract. Beat until smooth.
  • Crack in the large egg and mix until fully incorporated.
  • In another bowl, whisk together 1 teaspoon of baking soda and 1/4 teaspoon of salt, then incorporate into the wet mixture until just combined.
  • If you're adding chocolate chips or nuts, fold them in at this stage.
  • Using a tablespoon or cookie scoop, drop rounded portions of the dough onto the prepared baking sheet, leaving space for spreading.
  • Gently flatten each ball with a fork, creating a crisscross pattern.

Baking

  • Bake for about 10-12 minutes, or until the edges are slightly golden and the centers appear set.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Use room temperature ingredients for better mixing. Avoid overmixing to keep cookies tender. Chill dough for about 30 minutes if possible for enhanced flavor.
