  • 2 cups rolled oats
  • ½ cup honey or maple syrup
  • ½ cup almond butter or any nut butter of your choice
  • ¼ cup almond slices or any nuts
  • ½ cup chopped dried fruits like apricots or raisins
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup chocolate chips optional, for a fun twist

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the rolled oats, almond slices, and salt. Stir gently to distribute.
  • In a separate bowl, mix the almond butter, honey, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and mix thoroughly. If adding chocolate chips, fold them in gently.
  • Stir in the chopped dried fruits until evenly incorporated.
  • Line a baking dish (about 8x8 inches) with parchment paper, leaving some overhang.
  • Spread the granola mixture into the prepared pan, pressing down firmly.
  • Bake for about 15-20 minutes or until the edges are slightly golden.
  • Let the bars cool in the pan for 10 minutes, then lift out using the parchment paper. Cool completely before cutting into squares or bars.

Notes

Store in an airtight container at room temperature for up to one week or freeze for up to three months. Microwaving for 10-15 seconds can help regain chewiness.
