Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/4 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Main Ingredients

  • 1 cup sweetened shredded coconut Can substitute for unsweetened coconut or toasted coconut for variation.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the flour mixture to the wet ingredients, stirring until just combined.
  • Gently fold in the shredded coconut until evenly distributed.
  • Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, leaving space in between each cookie.

Baking

  • Bake for 10-12 minutes or until the edges are golden but the centers are still soft.
  • Let them cool slightly before transferring to a wire rack.

Notes

These cookies can be enjoyed with a glass of milk or cup of coffee. For added flavor, consider toasting the coconut or chilling the dough before baking.
