  • 4 medium zucchinis, thinly sliced If too moist, salt for 10 minutes before rinsing and patting dry.
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese Reserve half for topping.
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup breadcrumbs For topping.
  • optional Fresh herbs For garnish.

Preparation

  • Preheat the oven to 375°F (190°C).
  • Slice the zucchinis thinly to ensure even cooking.
  • In a large bowl, combine ricotta, half of the mozzarella cheese, grated Parmesan, eggs, garlic powder, onion powder, salt, and pepper. Stir until well combined.

Assembly

  • In a greased baking dish, start layering the sliced zucchini.
  • Spread half of the cheese mixture over the zucchini.
  • Add another layer of zucchini and repeat the layering process, finishing with the remaining cheese mixture.
  • Sprinkle the remaining mozzarella cheese on top, followed by the breadcrumbs.

Baking

  • Place the baking dish in the preheated oven and bake for about 30 minutes or until the top is golden brown and bubbly.
  • If desired, sprinkle with fresh herbs before serving.

Notes

To enhance flavor, consider adding Italian herbs or smoked paprika. Use different cheese varieties for a custom profile. Always pat zucchinis dry before using to prevent sogginess.
