  • 2 cans cans of white beans (such as cannellini or great northern), drained and rinsed
  • 2 cups shredded cheese (mozzarella, cheddar, or a blend)
  • 1 cup spinach, chopped (fresh or frozen)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme or Italian seasoning
  • to taste salt and pepper
  • 1/4 cup breadcrumbs (optional for topping)
  • Olive oil (for sautéing)

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté for about 3-5 minutes until it becomes translucent. Add in the minced garlic and sauté for an additional minute until fragrant.
  • In a large mixing bowl, combine the drained white beans, sautéed onion and garlic, chopped spinach, thyme, salt, and pepper. Mix gently to combine, being careful not to mash the beans too much.
  • Pour the bean mixture into a greased baking dish. Top with shredded cheese and sprinkle breadcrumbs across the top if desired.
  • Place in the preheated oven and bake for 25-30 minutes until the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving hot. Enjoy!

Notes

For toppings, consider adding fresh herbs or chili flakes for extra flavor. Store leftovers in an airtight container for up to 3-4 days or freeze for up to 3 months.
