Ingredients

  • 1 lb ground beef You can substitute with ground turkey or chicken
  • 1 can (10 oz) Rotel diced tomatoes and green chilies
  • 1 packet (10 oz) frozen tater tots
  • 2 cups shredded cheddar cheese Can experiment with different cheese varieties
  • 1 cup sour cream
  • 1 cup onion, chopped
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, brown the ground beef, breaking it into small pieces. Drain excess grease.
  • Add the chopped onion to the beef and sauté until translucent, about 5 minutes. Season with salt and pepper.
  • Stir in the can of Rotel and cook for an additional 5 minutes.
  • Reduce heat to low and mix in sour cream and 1 cup of shredded cheddar cheese until creamy.

Assembly and Baking

  • Spread the beef mixture evenly across the bottom of a large baking dish.
  • Layer the frozen tater tots on top and sprinkle the remaining cup of cheddar cheese.
  • Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly, and the tater tots are golden brown.
  • Remove from oven, let cool for a few minutes, then serve hot.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to three days. Reheat in the microwave or oven for best results. For longer storage, freeze portions in airtight containers for up to three months.
