Ingredients

  • 2 cups leftover mashed potatoes Make sure they are thick, not runny.
  • 1 cup shredded cheese (cheddar or your choice) Any cheese can be used for different flavors.
  • 1/2 cup flour Can substitute with breadcrumbs or crushed crackers.
  • 2 large eggs
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Oil for frying Use for frying the pancakes.

Preparation

  • In a bowl, mix the leftover mashed potatoes, shredded cheese, flour, eggs, green onions, salt, and pepper until combined.
  • Heat oil in a skillet over medium heat.

Cooking

  • Scoop a portion of the mixture and flatten it into a pancake shape.
  • Fry each pancake for about 3-4 minutes on each side until golden brown.
  • Drain on paper towels and serve warm.

Notes

Served with toppings like sour cream, applesauce, or fresh herbs. Store leftovers in an airtight container for up to 3 days, or freeze for a month, reheating in a skillet or oven. Customizable with cooked bacon bits, diced bell peppers, or jalapeños for a spicy kick.
