  • 1 cup brown rice (uncooked)
  • 2 cups vegetable or chicken broth
  • 1 can (4 oz) diced green chiles
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh cilantro (optional for topping) Optional for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium saucepan, combine the brown rice and broth. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes.
  • In a large mixing bowl, combine the cooked rice, diced green chiles, black beans, half of both cheeses (mozzarella and cheddar), garlic powder, onion powder, cumin, salt, and pepper. Mix well until everything is combined.
  • Spread the mixture into a greased 9x13 inch casserole dish, smoothing it out with a spatula.
  • Sprinkle the remaining cheese evenly over the top of the casserole.
  • Place in the preheated oven and bake for 30 minutes, or until it’s bubbly and the cheese is melted and golden.
  • Once out of the oven, top with chopped cilantro (if desired) before serving.

Notes

You can substitute the black beans for corn or add cooked chicken for a heartier dish. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
