  • Fresh parsley, chopped (for garnish)

Preparation

  • Preheat your oven to 400°F (200°C).
  • Rinse the zucchinis and cut off the ends. Slice them lengthwise into thick strips (about ½ inch thick).
  • On a baking sheet, place the zucchini steaks and brush them with olive oil. Sprinkle with salt, pepper, and Italian seasoning if using.
  • Evenly distribute the minced garlic over the zucchini slices.
  • Top each zucchini steak with a generous helping of shredded cheese.

Cooking

  • Bake in the preheated oven for about 15-20 minutes, until the zucchinis are tender and the cheese is bubbly and golden.
  • Remove from oven, garnish with fresh parsley, and serve.

Notes

Cut zucchinis evenly to ensure they cook uniformly. Experiment with different cheeses for varied flavors. Avoid overcooking; zucchinis should be tender, not mushy. Leftovers should be stored in an airtight container in the refrigerator and can be reheated in the oven at 350°F (175°C) for about 10 minutes.
